                A fusion dessert

The king of fruits- Mangoes are in season. There is nothing more satisfying then indulging in a pulpy, soft, juicy mango and that's why the king of fruits is truly a favourite across all age groups. So i have got a fusion dessert recipe using ripe mangoes as the key ingredient for you all to prepare at home.

Ingredients Required:- (6 servings)
•       2 cups all purpose flour 
2 tbsp melted butter
2 tbsp ghee
2 cups grated coconut 
3 cups mango pulp
½ cup sugar 
½  cup jaggery
1 tsp powdered green cardamom 
8 almonds 
10 cashew nuts 
2/3 cups hot water 
8 Raisins
4 drops mango essence 
A pinch of salt
Lemongrass leaves and mangoes for garnish 


Step- 1 To make dough
Take all purpose flour in a bowl and add melted butter, salt, 1cup mango pulp, mango essence, hot water slowly and mix it into a medium stiff dough keep aside for a while.
Step-2 Prepare the filling
In a pan heat up the ghee add almonds, cashew nuts and raisins fry until they turn light brown. Now add grated coconut and stir well in a low flame till golden brown. Then add 2 cups mango pulp, sugar, jaggery and cardamom powdered and keep stirring them for few minutes your filling is ready.
Step-3 To prepare potli
Now, take the kneaded dough and make small balls from it. Roll out small sheets and Stuff the portion of mixture in each sheet. Lift the sheet to make potli and seal them.

Step-4 Steaming Aam ki Potli 
Steam them in a steamer for 10 minutes untill they become tender. Serve hot.

Schezwan Sauce Recipe

                     Schezwan Sauce Recipe 
Quick and easy Vegetarian hot and fiery homemade Schezwan Sauce.This sauce is very versatile can be served as condiment with Snacks like
• French fries
• Momos 
• Cutlet
• Pakoras
Can also added to Indo Chinese recipes like 
• Schezwan Paneer chilli 
• Schezwan Fried rice 
• Schezwan Noodles 

                                  RECIPE 
Course: Sauce
Cuisine: Indo Chinese 
Prep time: 20 minutes 
Cook time: 20 minutes 
Serving: 1 small container 

Ingredients (1 cup= 250ml)
● 20 dried Kashmiri red chillies 
● 10 dried Bedgi chillies 
● 1/4 cup Cooking oil
● 1/2 cup hot Water
● 1/2 cup minced Onions 
● 1/4 cup Garlic finely chopped 
● 2 tbsp Ginger finely chopped 
● 1/2 tbsp freshly ground Black pepper 
● 2 tbsp Vinegar
● 2 tbsp Lime juice 
● 2 tbsp Soy sauce
● 2 tbsp Tomato ketchup 
● 1 tbsp Brown or regular Sugar 
● Salt to taste

Instructions 
● Take a large bowl Soak all dried red chillies in hot water for 30 minutes or till they turn soft ( you may discard the seeds if you want your sauce to be less spicy)
● Discard the water and blend to smooth paste adding water if required 
Keep aside
● Now take a large pan , heat 1/4 cup cooking oil 
● Saute in 1/4 cup Garlic and 2 tbsp Ginger for a minute or two in low flame till the raw aroma goes be careful not to burn the ginger garlic 
● Add the minced Onions and let them cook on a low flame 
● Now add in prepared red chilli paste
● Now add 1/4 cup water and adjust consistency 
● Bring this to a boil and Simmer till the sauce thickens 
● Furthermore add in 1/2 tbsp pepper, 2 tbsp vinegar, 2 tbsp Soy Sauce, 2 tbsp tomato ketchup, 2 tbsp lime juice, 1 tbsp sugar and salt to taste
● Mix well make sure everything is combined well 
● Cook the sauce till oil floats on top
● Switch off the flame and let it cool. Once the sauce has completely cooled down, transfer to an airtight container and store in the refrigerator.
● Finally, serve as a dip with fries and chips. Enjoy!
