Schezwan Sauce Recipe

                     Schezwan Sauce Recipe 
Quick and easy Vegetarian hot and fiery homemade Schezwan Sauce.This sauce is very versatile can be served as condiment with Snacks like
• French fries
• Momos 
• Cutlet
• Pakoras
Can also added to Indo Chinese recipes like 
• Schezwan Paneer chilli 
• Schezwan Fried rice 
• Schezwan Noodles 

                                  RECIPE 
Course: Sauce
Cuisine: Indo Chinese 
Prep time: 20 minutes 
Cook time: 20 minutes 
Serving: 1 small container 

Ingredients (1 cup= 250ml)
● 20 dried Kashmiri red chillies 
● 10 dried Bedgi chillies 
● 1/4 cup Cooking oil
● 1/2 cup hot Water
● 1/2 cup minced Onions 
● 1/4 cup Garlic finely chopped 
● 2 tbsp Ginger finely chopped 
● 1/2 tbsp freshly ground Black pepper 
● 2 tbsp Vinegar
● 2 tbsp Lime juice 
● 2 tbsp Soy sauce
● 2 tbsp Tomato ketchup 
● 1 tbsp Brown or regular Sugar 
● Salt to taste

Instructions 
● Take a large bowl Soak all dried red chillies in hot water for 30 minutes or till they turn soft ( you may discard the seeds if you want your sauce to be less spicy)
● Discard the water and blend to smooth paste adding water if required 
Keep aside
● Now take a large pan , heat 1/4 cup cooking oil 
● Saute in 1/4 cup Garlic and 2 tbsp Ginger for a minute or two in low flame till the raw aroma goes be careful not to burn the ginger garlic 
● Add the minced Onions and let them cook on a low flame 
● Now add in prepared red chilli paste
● Now add 1/4 cup water and adjust consistency 
● Bring this to a boil and Simmer till the sauce thickens 
● Furthermore add in 1/2 tbsp pepper, 2 tbsp vinegar, 2 tbsp Soy Sauce, 2 tbsp tomato ketchup, 2 tbsp lime juice, 1 tbsp sugar and salt to taste
● Mix well make sure everything is combined well 
● Cook the sauce till oil floats on top
● Switch off the flame and let it cool. Once the sauce has completely cooled down, transfer to an airtight container and store in the refrigerator.
● Finally, serve as a dip with fries and chips. Enjoy!
